 Chicken Maryland is a classic dish that combines fried chicken with a creamy gravy, traditionally served with bananas. Here’s a recipe for this delicious meal:


Ingredients:


4 chicken thighs and drumsticks (skin-on, bone-in)


Salt and pepper, to taste

1 cup all-purpose flour

1 tsp paprika

1/2 tsp garlic powder

1/4 tsp cayenne pepper (optional)

2 eggs

1 cup breadcrumbs

1/2 cup vegetable oil (for frying)

2 tbsp butter

1 cup chicken stock

1/2 cup heavy cream

2 ripe bananas (optional, for frying)

Instructions:

1. Prepare the Chicken:

Pat the chicken pieces dry with a paper towel.

Season them generously with salt and pepper.

2. Coat the Chicken:

In one shallow bowl, mix flour, paprika, garlic powder, and cayenne pepper.

In a second shallow bowl, beat the eggs.

In a third bowl, place the breadcrumbs.

Dredge each chicken piece in the flour mixture, then dip into the eggs, and finally coat in breadcrumbs. Set aside.

3. Fry the Chicken:

Heat the vegetable oil in a large skillet over medium heat. Add 1 tbsp butter.

Fry the chicken in batches until golden brown on both sides, about 7-8 minutes per side. Make sure the chicken is cooked through (internal temperature of 165°F / 75°C).

Transfer to a plate lined with paper towels to drain excess oil.

4. Make the Gravy:

Remove excess oil from the skillet, leaving about 2 tbsp.

Add the remaining butter and stir in the flour left from the coating process. Cook for 1 minute, scraping up any bits from the pan.

Gradually whisk in the chicken stock, allowing the gravy to thicken.

Stir in the heavy cream, and cook for another 2-3 minutes until the sauce is creamy.

5. Fry Bananas (optional):

If you’re serving Chicken Maryland the traditional way, slice the bananas lengthwise.

Fry them in a little butter until golden and soft.

6. Serve:

Serve the chicken topped with creamy gravy and fried bananas on the side.

Pair with mashed potatoes or vegetables if desired.
